The microbiological values of this great product have been tested in a food laboratory. This cocoa product is highly hygienically fermented and dried in controlled and clean wooden containers and in the rainy season it's fully machine dried. In the dry season and in summer, drying takes place in insulated, gauze-covered greenhouses to minimize insect contamination.

This mouth-watering raw chocolate is made by gently grinding the cacao beans of the original Criollo variety for two days in a stone mill, cultivated for a living by hundreds of families in the heart of the Peruvian Amazon rainforest. Foodin's cocoa is always alkaline-free.
